A Chinese proverb says that one lifetime isn't enough to discover the world's tea varieties. There are over 5,000 types of tea in nature, all coming from the same plant: Camellia Sinensis , an evergreen tree that grows both in the plains and at high altitudes in hot, humid climates. What allows for the different tea varieties is the way the plant's leaves are harvested and processed.
